In a world of industrial food processing, the Bilona method stands apart as a slow, Vedic and Ayurvedic way of making ghee. It begins with organic A2 milk, transforms it into curd, churns the curd into makkhan and finally clarifies the butter into golden ghee.

Why the curd base matters

Unlike quick cream-separation methods, Bilona ghee includes natural fermentation. The curd process breaks down lactose, improves digestibility and helps preserve the milk’s natural enzymes, aroma and medicinal properties.

At V-Desi, time is not treated as inefficiency. It is treated as an ingredient.

The V-Desi sequence

1. Pure A2 milk from our farm

We use milk from pure-bred Tharparkar cows raised on organic grass, grains and Ayurvedic herbs. The milk is free from hormones, antibiotics, GMOs and chemical residues.

2. Slow boiling in clay pots

Fresh milk is simmered for hours over a gentle cow-dung-cake fire. Clay regulates heat naturally and gives the milk an earthy character while preserving its richness.

3. Natural fermentation

The milk is cooled and set overnight with fresh curd. This probiotic stage makes the final ghee easier to digest and supports its immunity-enhancing qualities.

4. Sandalwood Bilona churning

Before sunrise, the curd is hand-churned rhythmically in clockwise and anticlockwise motion. The traditional sandalwood Bilona separates makkhan and adds its subtle aroma and pranic quality.

5. Slow clarification

Fresh butter is heated gradually in a mud vessel until moisture and milk solids separate. The result is grainy, aromatic, lactose- and casein-free ghee with no preservatives.
